Why do animals with the "Euthanised During Stray Hold" status show as In Care?

The status "Euthanised During Stray Hold" was designed to mark that an animal had been euthanised before the stay hold had been completed and the remains therefore needed to be held until the stray hold was complete.

It was designed as an in care status so users could track when that stray hold time expired so they knew when they could safely dispose of the remains.

Like any other in care status, this one requires an exit status to show it (or its remains) are no longer in care.

In most cases, simply upgrade the status to "Euthanised" to exit the animal so it no longer appears on your in care lists. In some cases, it may be appropriate to use a status such as "Cremated" or "Interred" instead. 

Changing the status to Euthanised does not count twice against your euthanasia statistics, but only once for the exit status only.
